what to make this weekend

I’ve been cooking a lot lately, but it’s impossible to post every. single. time. I make something delicious! These recipes are ones I’ve made in the past couples weeks that I think would be in your best interest to try this weekend. I love doing these posts (similar here and here) because it’s like a greatest hits in the kitchen. Click on the title of the dish to be taken to the recipe page!

Recent Favorites

These are things I’ve tried for the first time lately that I’m already looking forward to making again!

Giada’s Breakfast Hash

Or, my new favorite thing. Can you believe I had never had breakfast hash of any sort before this? My roommate and I saw Miss Giada make this on her show a couple weeks ago and he’s made it twice (once for dinner, once for breakfast) since. Substitute whatever ingredients you have on hand, just promise me you won’t skip the orange zest! Amazing.

Lightened Up Chicken Parmesan

Super easy, but delicious meal. I made this on just-another-manic-Monday when I had two chicken breasts in the fridge (and not a whole lot else) with about an hour to make and eat dinner. Serve with whole wheat pasta and salad!

Crispy Honey Lime Tilapia

Another stress-free meal I made during the week. The flavor of this delivers, without being too sweet. Perfect to make if you’re easing into the fish-cooking process like myself (it was only my second time having tilapia!). You could substitute haddock or cod as well!

The Three Grilled Cheese

I made these for my family to accompany my buffalo-chicken soup. An all-around hit. Side note: I always follow these instructions (with my own ingredients) for the perfect grilled cheese, every time.

Pumpkin Pie Whiskey Milkshakes

I made mine with regular whiskey, pumpkin ice cream (this one), almond milk, cinnamon, and vanilla. The perfect way to kick off a weekend, if you ask me!

Ina’s Apple Crisp

The topping is incredible. Some tips: I would add only the orange zest and orange juice (leave out the lemon entirely) and do less than she calls for. Also, take it out of the oven after an hour even if you’re not sure, you don’t want the apples too mushy! I’ve been eating it old for breakfast and warm for a snack. Versatility at its best.

Apple Cider Sangria

I’ve made a huge pitcher of this at the start of the past two weekends that seems to disappear. I substitute orange slices for the pear. I vote this as Molly’s new Halloween cocktail this year. Dangerously drinkable.

Recipes on Repeat

This blog can put a lot of pressure on me to constantly try new recipes, which I love, but sometimes I just want to make something I already know is delicious. These are recipes I’ve mentioned here before that have hit our table again recently.

Salt and Vinegar Crusted Haddock

When my roommate’s parents came to stay with us last weekend I told him he could pick anything for us to have for dinner. He chose another round of this crispy, ultra-flavorful and satisfying fish… And I think we were all pretty happy with the result.

30-minute Buffalo Chicken Soup

Have you not made this yet? I have three times! It is fool-proof. Please make it. Slurp it. Love it.

Breakfast Crostata

I’ve made this recipe a handful of times, but last weekend I took the savory route. I folded crumbled bacon into the dough, used apple butter (or preserves) as the filling, and drizzled maple icing over it after it cooled. Crowd pleaser.

Big Steak Salad

Mentioned before here. Here’s how I make a big steak salad: I make flank steak according these instructions (using my own marinade/seasoning). I make onion straws according to these directions. I buy mixed greens, crumbled blue cheese, cucumber, and a raspberry or blackberry vinaigrette. Put them all together and you have yourself one of my favorite meals. Like ever. (Oh heeeyyyy Taylor).

Chicken Philly Sandwiches

Also mentioned here. Oh my goodness I could eat these every day. The seasoning on the chicken, peppers, and onions is to die for. I keep hoagie rolls in the freezer just in case I need this sandwich one day. I will make this meal forever.

Buffalo Chicken Grilled Cheese

Previously mentioned here and here. A perfect pick-me-up at lunch time. This treat is also a favorite around here.
